When it comes to how to make crunchy granola, you need to stick to two key elements: rich and diverse nut mix and the butter-honey caramel sauce. The recipe itself is easy and straightforward but baking the granola takes time and attention for couple of hours. Nevertheless, it leaves you with a big supply of granola that stays nice and crispy for a long time. You’ll love it with milk or yogurt for breakfast and ice cream or fruits for dessert.

    Turn on the oven and set temperature for 160 C degrees.

    Step1

    Butter-Honey Caramel Sauce: In a small pot warm up oil, butter, honey, sugar, vanilla extract, salt and keep stirring until reaching smooth brown consistency. Set aside.

    Granola Dry Mix: Put together oats, coconut shreds, seeds and nuts in a large bowl. Add caramel sauce in small amounts and combine together, so all ingredients are covered.

    Line two pans with parchment paper. Two trays will help you rotating the batches without loosing time. Use a wooden spoon and distribute evenly the granola mix on the trays. Keep the layers flat to reach the crunchy effect when baking.

    Put the first tray in the oven. After 7-10 minutes stir the granola and put for another 5-7 minutes until brown. Once granola is baked according to your preference replace the tray and follow the same procedure. Note that with next batches it will take less time to bake the granola. In average you will need to stir it every 5-7 minutes.

    After all batches are done and cooled down you can break the granola sheets and put into jars or ziplock bags. My recommendation is to store the excessive amount in the freezer and grab it whenever you run out of your crunchy granola.
